The Mordicus beer cheese is a creamy cheese with spicy undertones of malt. During the ripening process, this cheese is washed several times in Mordicus, a special beer from Wageningen City Brewery.
Breed
The Montbéliarde is originally from eastern France and is a hardy mountain variety . A sweet, large grazer that makes few demands.
Preparation
MORDICUS BIO is prepared from cow's milk.
Prepared from 100% fresh Montbéliarde milk, matured in natural rind and washed several times in dark Mordicus beer during maturation.
